Not a lot in reality, a buyer has made an offer and it is being considered by the seller. Maybe it is fishing, waiting for someone to make a higher offer? Usually nothing is fixed in stone until contracts are exchanged. Sold STC means sold soubject to contract, If they don't exhange it doesn't happen and the house can go back on the market.

I agree with above. Sometimes it can be that an offer has been accepted, but it is subject to survey. I know some agents who mark properties as 'sold subject to contract' as soon as an offer has been accepted. But as above, until the dotted line has been signed, nothing is certain.
