Why would someone request a cash sale on their house?

A lot of people do not want to get caught up in a chain, so a cash buyer is ideal.

A true cash buyer with funds in place can proceed instantly, and isn't at risk of possible 'changes of mind' by mortgage lenders. Someone who has offered on a property but hasn't finalised their mortgage is at the mercy of the mortgage company

Whilst a cash buyer is great, it is not so great if you are talking about a cash buy company. They pay nowhere near market value and rip people off big time! Asking for a cash buyer is going to bring the worms out of the wood work.
